Skinny Broccoli and Cheese Mini Omelet

Yep, I said Skinny! If you are on Weight Watchers which I am seriously thinking about trying again you have to visit Skinny Taste if you haven't already. They have great Skinny recipes and they have the points listed for you. You don't even have to be on a diet to eat these it is just good food. I know I just did a post with Chicken and Broccoli Cups but these just look so good and yummy I had to post them as well. I love those easy muffin tin recipes because they are just so darn easy to eat and the kids don't make a big mess. 



Broccoli and Cheese Mini Egg Omelets
Gina's Weight Watcher Recipes
Servings: Makes 9 cupcakes 
 Old Points: 2 pts each • Points+: 2 pts each
Calories: 103.9 • Fat: 6.5 g 
 Carbs: 2.7 g • Fiber: 1.2 g  Protein: 8.7 g

Ingredients: 

·                     4 cups broccoli florets
·                     4 whole eggs
·                     1 cup egg whites
·                     1/4 cup reduced fat cheddar
·                     1/4 cup good grated cheese like pecorino romano (any cheese will do)
·                     1 tbs olive oil
·                     salt and fresh pepper
·                     cooking spray

·         Directions: 

·         Preheat oven to 350°. Steam broccoli with a little water for about 6-7 minutes.
When broccoli is cooked, mash into smaller pieces and add olive oil, salt and pepper.Mix well.

Spray cupcake tin with cooking spray and spoon broccoli mixture evenly into 9 tins.

In a medium bowl, beat egg whites, eggs, grated cheese, salt and pepper. Pour into the greased tins over broccoli until a little more than 3/4 full. Top with grated cheddar and bake in the oven until cooked, about 20 minutes. Serve immediately. Wrap any leftovers in plastic wrap and store in the refrigerator to enjoy during the week.

That is pretty easy stuff!
